We took over Quercus in Royal Wootton Bassett because we believed the town deserved a proper bistro. Somewhere relaxed and genuinely welcoming, with seasonal cooking, a great glass of wine, and no unnecessary fuss.
The philosophy has always been simple. Buy the best ingredients we can find - most of them grown or reared within a few miles of the kitchen - and let them do the talking. Our menus change every month, planned around what's at its best rather than what's convenient.
French bistro cooking has always been the inspiration. Not fine dining, not gastropub - just well-executed, flavour-forward food in a setting where you can settle in and enjoy yourself.
When the opportunity came to open a second kitchen at The Peppermill in Devizes, it felt like a natural step. A beautiful building, a town with a real appetite for good food, and the same values we'd built Quercus on from the beginning.
